Description
A warm and sweet breakfast casserole studded with juicy blueberries, perfect for brunches and gatherings.
Ingredients
- 8 slices of bread (white, whole wheat, or your preference)
- 2 cups of fresh blueberries (or frozen)
- 4 large eggs
- 2 cups of milk
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of cinnamon
- 1/4 cup of maple syrup
- Powdered sugar for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking dish.
- Cut the bread into cubes and place half in the bottom of the baking dish.
- Sprinkle half of the blueberries over the bread layer.
- Add the remaining bread cubes on top of the blueberry layer.
- In a mixing bowl, whisk together eggs, milk, vanilla, cinnamon, and maple syrup.
- Pour the egg mixture evenly over the bread and blueberries.
- Gently press down on the bread with a spatula.
- Let the casserole sit for 15-20 minutes.
- Bake for 30-35 minutes, or until the top is golden brown.
- Serve warm, dusted with powdered sugar if desired.
Notes
For an extra burst of flavor, add a teaspoon of lemon zest to the egg mixture. You can substitute the bread with gluten-free options or use dairy-free milk.
