Description

A warm and sweet breakfast casserole studded with juicy blueberries, perfect for brunches and gatherings.


Ingredients

  • 8 slices of bread (white, whole wheat, or your preference)
  • 2 cups of fresh blueberries (or frozen)
  • 4 large eggs
  • 2 cups of milk
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of cinnamon
  • 1/4 cup of maple syrup
  • Powdered sugar for serving (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish.
  3. Cut the bread into cubes and place half in the bottom of the baking dish.
  4. Sprinkle half of the blueberries over the bread layer.
  5. Add the remaining bread cubes on top of the blueberry layer.
  6. In a mixing bowl, whisk together eggs, milk, vanilla, cinnamon, and maple syrup.
  7. Pour the egg mixture evenly over the bread and blueberries.
  8. Gently press down on the bread with a spatula.
  9. Let the casserole sit for 15-20 minutes.
  10. Bake for 30-35 minutes, or until the top is golden brown.
  11. Serve warm, dusted with powdered sugar if desired.

Notes

For an extra burst of flavor, add a teaspoon of lemon zest to the egg mixture. You can substitute the bread with gluten-free options or use dairy-free milk.
