Quick Blueberry French Toast Casserole


Description

A delightful breakfast casserole combining the flavors of blueberry and French toast, perfect for easy preparation and serving on busy mornings.


Ingredients

  • 8 slices of bread (preferably challah or brioche)
  • 2 cups of blueberries (fresh or frozen)
  • 4 large eggs
  • 2 cups of milk
  • 1/4 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of salt
  • Butter (for greasing)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish generously with butter.
  2. Cut the bread into cubes and layer half of these in the greased baking dish.
  3. Sprinkle half of the blueberries over the bread cubes.
  4. In a mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until well combined.
  5. Pour half of this egg mixture over the bread and blueberries, allowing it to soak in.
  6. Layer the remaining bread and blueberries on top, then pour the rest of the egg mixture over the dish.
  7. Allow it to sit for about 15 minutes.
  8. Bake for 30-35 minutes until golden brown and set. Serve warm.

Notes

For a sweeter finish, serve with maple syrup or dust with powdered sugar. This casserole can also be made a day in advance.
