Description
A delightful breakfast casserole combining the flavors of blueberry and French toast, perfect for easy preparation and serving on busy mornings.
Ingredients
- 8 slices of bread (preferably challah or brioche)
- 2 cups of blueberries (fresh or frozen)
- 4 large eggs
- 2 cups of milk
- 1/4 cup of sugar
- 1 teaspoon of vanilla extract
- 1 teaspoon of cinnamon
- 1/4 teaspoon of salt
- Butter (for greasing)
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish generously with butter.
- Cut the bread into cubes and layer half of these in the greased baking dish.
- Sprinkle half of the blueberries over the bread cubes.
- In a mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until well combined.
- Pour half of this egg mixture over the bread and blueberries, allowing it to soak in.
- Layer the remaining bread and blueberries on top, then pour the rest of the egg mixture over the dish.
- Allow it to sit for about 15 minutes.
- Bake for 30-35 minutes until golden brown and set. Serve warm.
Notes
For a sweeter finish, serve with maple syrup or dust with powdered sugar. This casserole can also be made a day in advance.
