Description
A delightful and easy breakfast casserole combining soft bread and plump blueberries for a comforting dish that’s perfect for family gatherings or brunch.
Ingredients
- 1 loaf of bread (preferably challah or brioche)
- 4 large eggs
- 2 cups milk
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 2 cups fresh blueberries
- Butter for greasing
- Maple syrup for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with butter to prevent sticking.
- Cut the bread into chunks and spread half of it evenly in the bottom of the baking dish. Layer half of the blueberries over the bread.
- In a mixing bowl, whisk together the eggs, milk, sugar, vanilla, and cinnamon until fully combined.
- Pour half of the egg mixture over the bread and blueberries in the dish. Add the remaining bread and blueberries on top, then drizzle the rest of the egg mixture over everything.
- Gently press down on the layers to help the bread soak in the custard.
- Allow the casserole to sit for about 15 minutes.
- Place in the preheated oven and bake for 30-35 minutes, or until the top is golden and the casserole is set.
- Serve warm with maple syrup if desired.
Notes
Leftovers can be stored in the refrigerator for up to 3 days or frozen for longer storage. Stale bread works best; consider toasting fresh bread lightly before cutting.
