Ingredients

  • 1 beef tenderloin
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for searing
  • Herbs (like thyme or rosemary) for seasoning


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine spinach, cream cheese, breadcrumbs, Parmesan cheese, garlic, salt, and pepper until well blended.
  3. Carefully slice a pocket into the beef tenderloin, ensuring not to cut all the way through.
  4. Generously stuff the mixture into the slit in the beef, packing it in as best as you can.
  5. In a skillet over medium-high heat, drizzle olive oil and sear the beef on all sides until browned.
  6. Transfer the beef to a baking dish and season it with your chosen herbs.
  7. Bake in the preheated oven for about 25-30 minutes or until the beef reaches an internal temperature of 135°F (57°C) for a perfect medium-rare.
  8. Allow the beef to rest for 10 minutes before slicing and serving.

Notes
