Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine spinach, cream cheese, breadcrumbs, Parmesan cheese, garlic, salt, and pepper until well blended.
- Carefully slice a pocket into the beef tenderloin, ensuring not to cut all the way through.
- Generously stuff the mixture into the slit in the beef, packing it in as best as you can.
- In a skillet over medium-high heat, drizzle olive oil and sear the beef on all sides until browned.

- Bake in the preheated oven for about 25-30 minutes or until the beef reaches an internal temperature of 135°F (57°C) for a perfect medium-rare.
