Description

An impressive entrée featuring seared beef and a creamy filling of spinach, sun-dried tomatoes, and cheese, perfect for festive dinners.


Ingredients

  • 1 Beef tenderloin
  • 2 cups Fresh spinach
  • 8 oz Cream cheese
  • 3 cloves Garlic, minced
  • 1/2 cup Sun-dried tomatoes, chopped
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp Olive oil
  • Salt and pepper, to taste
  • Twine, for securing tenderloin


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine sautéed spinach, cream cheese, minced garlic, sun-dried tomatoes, and Parmesan cheese. Mix until well blended.
  3. Carefully slice the beef tenderloin lengthwise, creating a pocket for the stuffing.
  4. Stuff the beef with the spinach mixture, then use twine to secure the opening.
  5. Rub the outside of the tenderloin with olive oil, adding salt and pepper to taste.
  6. Heat a skillet over medium-high heat and sear the tenderloin on all sides until browned, around 2-3 minutes per side.
  7. After searing, transfer the skillet to your preheated oven and roast for about 20-25 minutes, or until reaching desired doneness.
  8. Once cooked, let the tenderloin rest for 10 minutes before slicing and serving.

Notes

Searing locks in flavors; use a meat thermometer for perfect doneness at 135°F (57°C) for medium-rare.
