An impressive entrée featuring seared beef and a creamy filling of spinach, sun-dried tomatoes, and cheese, perfect for festive dinners.
Ingredients
- 1 Beef tenderloin
- 2 cups Fresh spinach
- 8 oz Cream cheese
- 3 cloves Garlic, minced
- 1/2 cup Sun-dried tomatoes, chopped
- 1/2 cup Parmesan cheese, grated
- 2 tbsp Olive oil
- Salt and pepper, to taste
- Twine, for securing tenderloin
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine sautéed spinach, cream cheese, minced garlic, sun-dried tomatoes, and Parmesan cheese. Mix until well blended.
- Carefully slice the beef tenderloin lengthwise, creating a pocket for the stuffing.
- Stuff the beef with the spinach mixture, then use twine to secure the opening.
- Rub the outside of the tenderloin with olive oil, adding salt and pepper to taste.
- Heat a skillet over medium-high heat and sear the tenderloin on all sides until browned, around 2-3 minutes per side.
- After searing, transfer the skillet to your preheated oven and roast for about 20-25 minutes, or until reaching desired doneness.
- Once cooked, let the tenderloin rest for 10 minutes before slicing and serving.
Notes
Searing locks in flavors; use a meat thermometer for perfect doneness at 135°F (57°C) for medium-rare.
