Ingredients
- 2 to 3 lbs roast beef
- 1 cup cranberry sauce (homemade or store-bought)
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh rosemary for garnish (optional but recommended)
Instructions
- Preheat your oven to 350°F (175°C).
- Generously season the roast beef with salt and pepper.
- In a medium-sized bowl, blend together the cranberry sauce and balsamic vinegar.
- Heat olive oil in a skillet over medium-high heat and sear the roast beef on all sides.
- Transfer the seared roast into a baking dish and pour the cranberry-balsamic mixture over the top.
- Roast in the oven for about 1 hour or until the desired doneness is reached.
- Allow the beef to rest for 10 minutes before slicing.
- Garnish with fresh rosemary and serve.
Notes
