Description

A tender and juicy roast beef dish enhanced by tart cranberry sauce and balsamic vinegar, perfect for any gathering.


Ingredients

  • 2 to 3 lbs roast beef
  • 1 cup cranberry sauce (homemade or store-bought)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh rosemary for garnish (optional but recommended)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Generously season the roast beef with salt and pepper.
  3. In a medium-sized bowl, blend together the cranberry sauce and balsamic vinegar.
  4. Heat olive oil in a skillet over medium-high heat and sear the roast beef on all sides.
  5. Transfer the seared roast into a baking dish and pour the cranberry-balsamic mixture over the top.
  6. Roast in the oven for about 1 hour or until the desired doneness is reached.
  7. Allow the beef to rest for 10 minutes before slicing.
  8. Garnish with fresh rosemary and serve.

Notes

For a flavor twist, consider adding crushed garlic or trying apricot preserves instead of cranberry sauce.
