Ingredients
- 1 pound Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken or vegetable broth
- 8 ounces lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions
- Brown the Italian sausage over medium heat in a large Dutch oven until fully cooked. Drain any excess fat if needed.
- Add diced onion and minced garlic to the pot; sauté until the onion is translucent.
- Stir in diced tomatoes, broth, Italian seasoning, and broken lasagna noodles. Bring to a boil.
- Reduce heat and let the mixture simmer for about 20 minutes, or until noodles are tender.
- Stir in ricotta cheese and half of the shredded mozzarella until melted and combined.
- Season with salt and pepper to taste; serve hot, topped with remaining mozzarella, grated Parmesan, and fresh basil.
Notes
Store leftovers in an airtight container for up to three days, or freeze for up to three months. Use a Dutch oven for better browning and flavor development.
