Ingredients
- 1 pound Italian sausage
- 4 cups diced potatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the Italian sausage over medium heat until nicely browned.
- Add the chopped onions, garlic, carrots, and celery; sauté for about 5 minutes until the vegetables are softened.
- Stir in the diced potatoes and pour in the chicken broth; bring to a boil before reducing the heat to let it simmer.
- Cook for about 15-20 minutes, or until the potatoes are tender.
- Stir in the heavy cream and season with salt and pepper; cook for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
