Ingredients

  • 1 pound Italian sausage
  • 4 cups diced potatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, brown the Italian sausage over medium heat until nicely browned.
  2. Add the chopped onions, garlic, carrots, and celery; sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the diced potatoes and pour in the chicken broth; bring to a boil before reducing the heat to let it simmer.
  4. Cook for about 15-20 minutes, or until the potatoes are tender.
  5. Stir in the heavy cream and season with salt and pepper; cook for an additional 5 minutes.
  6. Serve hot, garnished with fresh parsley.
