  • 2 sweet potatoes, diced

  • 1 package (9 oz) three-cheese tortellini
  • 1/2 cup cream
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat a little oil over medium heat and sauté the minced garlic and diced sweet potatoes until they are fork-tender, about 5-7 minutes.
  2. Pour in the broth and bring it to a simmer, ensuring all those savory flavors begin to meld.
  3. Stir in the fresh spinach and the tortellini, cooking just until the tortellini is al dente, usually around 4-5 minutes.
  4. Finally, pour in the cream, stirring gently to combine, and season with salt and pepper to taste.
  5. Serve the soup hot, garnished with additional spinach or grated cheese if desired.

Notes
