Ingredients
- 2 sweet potatoes, diced
- 4 cups fresh spinach
- 3 cloves garlic, minced
- 1 package (9 oz) three-cheese tortellini
- 1/2 cup cream
- 4 cups chicken or vegetable broth

Instructions
- In a large pot, heat a little oil over medium heat and sauté the minced garlic and diced sweet potatoes until they are fork-tender, about 5-7 minutes.
- Pour in the broth and bring it to a simmer, ensuring all those savory flavors begin to meld.
- Stir in the fresh spinach and the tortellini, cooking just until the tortellini is al dente, usually around 4-5 minutes.
- Finally, pour in the cream, stirring gently to combine, and season with salt and pepper to taste.
