Ingredients

  • 1 package of puff pastry
  • 4 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup diced vegetables (bell peppers, onions, spinach, etc.)
  • Salt and pepper to taste
  • 1 egg (for egg wash)
  • Olive oil or cooking spray


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut it into rectangles.
  3. In a skillet, scramble the eggs and cook them with the diced vegetables, cheese, salt, and pepper until set.
  4. Place a spoonful of the egg mixture onto one half of each pastry rectangle.
  5. Fold the pastry over to enclose the filling, sealing the edges with a fork.
  6. Brush the tops with the beaten egg.
  7. Bake for 15-20 minutes or until golden brown.
