- 1 package of puff pastry
- 4 large eggs

- 1 egg (for egg wash)
- Olive oil or cooking spray
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface and cut it into rectangles.
- In a skillet, scramble the eggs and cook them with the diced vegetables, cheese, salt, and pepper until set.
- Place a spoonful of the egg mixture onto one half of each pastry rectangle.
