Ingredients

  • 1 pound ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup carrot, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1 cup pasta (optional)
  • Fresh parsley for garnish


Instructions

  1. In a large bowl, combine ground meat, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix and form into small meatballs.
  2. In a large pot over medium heat, heat a splash of oil and add the diced onions, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Pour in beef broth and diced tomatoes, and bring to a boil.
  4. Gently drop in meatballs, reduce heat, and let simmer for 20-25 minutes, or until meatballs are cooked through.
  5. If using, add pasta and cook according to package instructions.
  6. Taste and adjust seasoning if needed.
  7. Serve hot, garnished with fresh parsley.

Notes

Store leftovers in airtight containers for up to 3 days in the fridge or freeze for up to 3 months. Reheat until boiling for food safety.
