Description

A one-pan meal featuring seasoned chicken and vibrant vegetables, perfect for weeknight dinners and meal prepping.


Ingredients

  • 1 pound chicken breast, sliced
  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: avocado, salsa, cheese, cilantro


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced chicken, bell pepper, onion, olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Toss until well coated.
  3. Spread the mixture evenly on a sheet pan.
  4. Bake for 20-25 minutes, until the chicken is cooked through and vegetables are tender.

Notes
