Ingredients
- 1 pound chicken breast, sliced
- 1 bell pepper, sliced (any color)
- 1 onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Tortillas for serving
- Optional toppings: avocado, salsa, cheese, cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced chicken, bell pepper, onion, olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Toss until well coated.
- Spread the mixture evenly on a sheet pan.
- Bake for 20-25 minutes, until the chicken is cooked through and vegetables are tender.
- Serve in warm tortillas and top with your favorite extras.
Notes
Don’t overcrowd the pan; for extra char, broil for a few minutes at the end. Allow chicken to marinate for better flavor.
