Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, sliced
  • 1 red onion, chopped
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper.
