A tender, fall-apart chuck roast infused with a tart and sweet cranberry balsamic glaze, perfect for family dinners and special occasions.
Ingredients
- 2 to 3 pounds chuck roast
- 1 cup fresh or frozen cranberries
- 1/2 cup balsamic vinegar
- 1 cup beef broth
- 2 tablespoons brown sugar
- 1 tablespoon olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (like rosemary or thyme) for garnish
Instructions
- Preheat your oven to 300°F (150°C).
- In a large skillet, heat olive oil over medium-high heat. Season the chuck roast with salt and pepper, and sear it on all sides until beautifully browned.
- Remove the roast and set it aside. In the same skillet, add your sliced onions and cook until softened, then stir in minced garlic for an additional minute.
- In a mixing bowl, combine cranberries, balsamic vinegar, beef broth, and brown sugar, mixing well.
- In a roasting pan, place the seared roast, pour the cranberry balsamic mixture over it, and surround it with the sautéed onions.
- Cover the pan with a lid or foil and place in the oven.
- Braise for about 180-240 minutes, or until the roast is fork-tender.
- Once done, let the roast rest for a few minutes before slicing and drizzle with the glaze.
- Garnish with fresh herbs and serve to your delighted guests.
