Description

A tender, fall-apart chuck roast infused with a tart and sweet cranberry balsamic glaze, perfect for family dinners and special occasions.


Ingredients

  • 2 to 3 pounds chuck roast
  • 1 cup fresh or frozen cranberries
  • 1/2 cup balsamic vinegar
  • 1 cup beef broth
  • 2 tablespoons brown sugar
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (like rosemary or thyme) for garnish


Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large skillet, heat olive oil over medium-high heat. Season the chuck roast with salt and pepper, and sear it on all sides until beautifully browned.
  3. Remove the roast and set it aside. In the same skillet, add your sliced onions and cook until softened, then stir in minced garlic for an additional minute.
  4. In a mixing bowl, combine cranberries, balsamic vinegar, beef broth, and brown sugar, mixing well.
  5. In a roasting pan, place the seared roast, pour the cranberry balsamic mixture over it, and surround it with the sautéed onions.
  6. Cover the pan with a lid or foil and place in the oven.
  7. Braise for about 180-240 minutes, or until the roast is fork-tender.
  8. Once done, let the roast rest for a few minutes before slicing and drizzle with the glaze.
  9. Garnish with fresh herbs and serve to your delighted guests.
