Description

Ingredients

  • 4 chicken breasts
  • 1 cup salsa (your favorite kind)
  • 1 cup rice (white or brown, based on preference)
  • 2 avocados, diced
  • 1/2 cup fresh cilantro, chopped

  • 1 can beans (black or pinto)
  • 1/4 cup cilantro lime vinaigrette


Instructions

  1. Place chicken breasts in the slow cooker, fully covered with salsa.
  2. Cook on low for 6-8 hours or high for 4 hours until tender and cooked through.
  3. Shred the chicken using two forks.
  4. Prepare the rice according to package instructions.
  5. In a large bowl, combine shredded chicken, cooked rice, diced avocados, chopped cilantro, cheese, and beans.
  6. Drizzle with cilantro lime vinaigrette before serving.
