A hearty and flavorful chili made easily in a slow cooker, perfect for any occasion.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (28 oz) diced tomatoes
- 1 packet chili seasoning mix
- 1 cup chicken broth
- 1 onion, diced
- 1 bell pepper, diced
- Salt and pepper to taste
Instructions
- In your slow cooker, combine the chicken breasts, black beans, kidney beans, corn, diced tomatoes, chili seasoning mix, chicken broth, onion, and bell pepper.
- Stir everything together well and season with salt and pepper to taste.
- Cover the slow cooker and set it to cook on low for 6-8 hours or high for 4 hours.
- About 30 minutes before serving, shred the chicken with two forks and stir it back into the chili.
- Serve hot, garnished with your favorite toppings.
Notes
Feel free to substitute chicken with ground turkey or tofu for a vegetarian option. Top with shredded cheese, sour cream, or avocado for added flavor.
