Description

A hearty and flavorful chili made easily in a slow cooker, perfect for any occasion.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 1 packet chili seasoning mix
  • 1 cup chicken broth
  • 1 onion, diced
  • 1 bell pepper, diced
  • Salt and pepper to taste


Instructions

  1. In your slow cooker, combine the chicken breasts, black beans, kidney beans, corn, diced tomatoes, chili seasoning mix, chicken broth, onion, and bell pepper.
  2. Stir everything together well and season with salt and pepper to taste.
  3. Cover the slow cooker and set it to cook on low for 6-8 hours or high for 4 hours.
  4. About 30 minutes before serving, shred the chicken with two forks and stir it back into the chili.
  5. Serve hot, garnished with your favorite toppings.

Notes

Feel free to substitute chicken with ground turkey or tofu for a vegetarian option. Top with shredded cheese, sour cream, or avocado for added flavor.
