Ingredients
- 4 chicken breasts
- 1 cup chicken broth
- 2 lemons (juiced and zested)
- 2 tablespoons olive oil
- 3 garlic cloves (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups rice
- 4 cups water or additional broth
- Fresh parsley (optional, for garnish)
Instructions
- In a slow cooker, combine 1 cup of chicken broth, the juice and zest of 2 lemons, 2 tablespoons of olive oil, 3 minced garlic cloves, 1 teaspoon each of dried thyme and dried rosemary, and salt and pepper to taste.
- Place the 4 chicken breasts into the mixture, ensuring they are well coated with the marinade.
- Cover the slow cooker and cook on low for 6–8 hours or high for 3–4 hours, until the chicken is cooked through and tender.
- About 30 minutes before you’re ready to serve, cook 2 cups of rice according to package instructions using 4 cups of water or additional broth.
- Once both the chicken and rice are cooked, fluff the rice and serve the lemon herb chicken on top. Garnish with fresh parsley if desired.
Notes
Feel free to customize the dish by swapping chicken broth for vegetable broth or using brown rice for a healthier option.
