Ingredients
- 1 cup dried lentils
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups vegetable broth
- 2 tablespoons taco seasoning
- Salt and pepper to taste
Instructions
- Rinse lentils under cold water to remove any debris.
- In your slow cooker, combine the rinsed lentils, black beans, diced tomatoes, onion, garlic, and bell pepper.
- Pour in the vegetable broth and sprinkle the taco seasoning over the mixture. Stir gently to combine and season with salt and pepper.
- Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours, until lentils are tender.
- Once cooked, stir and serve warm. Top with avocado, fresh cilantro, or a squeeze of lime if desired.
Notes
For extra flavor, sauté the onions, garlic, and bell pepper in olive oil before adding them to the slow cooker. Customize with different beans or toppings.
