Slow Cooker Street Corn Chicken


Description

A comforting and hearty slow cooker dish combining tender chicken with the flavors of street corn.


Ingredients

  • 1 lb chicken breast
  • 1 can corn (15 oz), drained
  • 1 cup cream (or sour cream)
  • 1 packet taco seasoning
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced tomatoes
  • Chopped cilantro (for garnish)
  • Tortillas, chips, or bowls (for serving)


Instructions

  1. Place the chicken breast in the slow cooker.
  2. Add the drained corn, cream, and taco seasoning on top of the chicken, ensuring it’s well-coated.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. During the last 30 minutes, stir in the shredded cheese and diced tomatoes to melt and blend flavors.
  5. Once done, shred the chicken into the sauce and mix everything thoroughly.
  6. Serve it up in warm tortillas, bowls, or with crunchy chips, garnishing with fresh cilantro.

Notes

For a quicker option, consider using pre-cooked or rotisserie chicken. Customize with your favorite toppings for added flavor.
