Description

A comforting dish featuring tender chicken in a rich, creamy sauce served with perfectly cooked rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper and sauté for 5-7 minutes on each side until golden brown. Remove chicken and set aside.
  2. In the same skillet, add chopped onions and sauté for about 3 minutes until translucent. Then, add minced garlic and cook for another minute.
  3. Stir in the rice and pour in chicken broth. Bring to a boil, then reduce heat. Return chicken breasts to the skillet, cover, and simmer for 20 minutes.
  4. After simmering, stir in heavy cream and frozen peas. Cook for an additional 5 minutes to meld flavors.
  5. Garnish with fresh parsley and serve hot.

Notes

Ensure chicken is not overcooked during initial sauté as it will finish cooking while simmering with the rice. Feel free to swap chicken for shrimp or tofu for other variations.
