A delightful fusion of snickerdoodle cookies and banana bread, this cinnamon-spiced loaf is perfect for breakfast, snacks, or dessert.


Ingredients

  • 3 ripe bananas, mashed
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ cup milk
  • For the Cinnamon-Sugar Topping:
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing and flouring it, or line it with parchment paper.
  2. Mash the bananas in a large mixing bowl until smooth.
  3. Mix in the wet ingredients: granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Stir until well combined.
  4. In a separate bowl, whisk together the dry ingredients: all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry mix to the wet ingredients, alternating with the milk. Stir until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Sprinkle the cinnamon-sugar mixture evenly over the batter.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool the bread in the pan for 10 minutes before transferring it to a wire rack.

Notes

Use extra ripe bananas for best flavor. You can substitute unsalted butter with coconut oil for a dairy-free version.
