Description

Delightful gingerbread cookies that are soft, chewy, and perfect for decorating during the holiday season.


Ingredients

  • 3/4 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 3/4 cup molasses
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1 Tbsp. ground cinnamon
  • 1 Tbsp. ground ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1 whole egg
  • 1 tsp. baking soda
  • 3-3 1/4 cups all-purpose flour
  • 2 cups powdered sugar
  • 1 tsp. vanilla extract (for frosting)
  • 3-4 Tbsp. milk (whole or reduced fat)
  • Decorative candies or sprinkles (optional)


Instructions

  1. In a mixing bowl, combine the melted butter, brown sugar, molasses, and vanilla. Mix until smooth.
  2. Add in the salt, cinnamon, ginger, nutmeg, cloves, and egg, stirring until well combined.
  3. Slowly incorporate the baking soda and flour, forming a dough. Add flour until the dough is no longer sticky.
  4. Refrigerate the dough for at least 2 hours to firm up, making it easier to roll out.
  5. Preheat your oven to 350°F (175°C). Roll the dough to 1/4-inch thickness on a floured surface.
  6. Use cookie cutters to create gingerbread men shapes and place them on a lined baking sheet.
  7. Bake for about 8-10 minutes or until the edges are firm. Let cool completely on a wire rack.
  8. For the frosting, mix powdered sugar, vanilla extract, and milk until smooth. Decorate your cookies with fun designs and toppings.

Notes

For extra flavor, let the dough sit overnight in the fridge. Store in an airtight container at room temperature for up to a week.
