Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup unsulfured molasses
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. Cream the softened butter with brown sugar until fluffy.
  4. Beat in the egg, followed by the molasses and vanilla extract.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Drop heaping spoonfuls of dough onto parchment-lined baking sheets.
  7. Bake for 10-12 minutes until the edges are set and the centers remain soft.
  8. Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
