Description

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, chopped carrots, and chopped celery, sautéing until they soften, roughly 5-7 minutes.
  2. Toss in the minced garlic and cook for an additional minute.
  3. Pour in the chicken or vegetable broth and diced tomatoes. Add the dried oregano, thyme, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer gently for about 20-30 minutes.
  5. Taste and adjust the seasoning if necessary.
  6. Serve warm, garnished with fresh parsley.

Notes

For a vegetarian option, substitute chicken broth with vegetable broth. Allow it to cool completely before storing.
