Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion, chopped carrots, and chopped celery, sautéing until they soften, roughly 5-7 minutes.
- Toss in the minced garlic and cook for an additional minute.
- Pour in the chicken or vegetable broth and diced tomatoes. Add the dried oregano, thyme, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer gently for about 20-30 minutes.
- Taste and adjust the seasoning if necessary.
- Serve warm, garnished with fresh parsley.
Notes
For a vegetarian option, substitute chicken broth with vegetable broth. Allow it to cool completely before storing.
