A comforting Southern-style dish that brings warmth and flavor, perfect for family gatherings or a nourishing weeknight dinner.


Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water or broth (chicken or vegetable)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 bay leaf
  • 1/2 cup heavy cream (optional)


Instructions

  1. Rinse the black-eyed peas thoroughly, removing any debris.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and minced garlic; sauté until the onion is translucent and fragrant.
  4. Incorporate the rinsed black-eyed peas into the pot, along with the water or broth, salt, black pepper, cayenne pepper (if using), and bay leaf.
  5. Bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 20-25 minutes or until the peas are tender.
  6. If aiming for a creamier dish, stir in the heavy cream just before serving.
  7. Remove the bay leaf before serving warm.

Notes

For best results, soak dried black-eyed peas in water overnight before cooking. They can also be enjoyed with rice or paired with cornbread.
