Ingredients
- 1 cup dried black-eyed peas
- 4 cups water or broth (chicken or vegetable)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 bay leaf
- 1/2 cup heavy cream (optional)
Instructions
- Rinse the black-eyed peas thoroughly, removing any debris.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic; sauté until the onion is translucent and fragrant.
- Incorporate the rinsed black-eyed peas into the pot, along with the water or broth, salt, black pepper, cayenne pepper (if using), and bay leaf.
- Bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 20-25 minutes or until the peas are tender.
- If aiming for a creamier dish, stir in the heavy cream just before serving.
- Remove the bay leaf before serving warm.
Notes
For best results, soak dried black-eyed peas in water overnight before cooking. They can also be enjoyed with rice or paired with cornbread.
