Ingredients
- 1 lb ground beef
- 2 medium sweet potatoes, peeled and diced
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil
- Fresh cilantro (for garnish)
Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat.
- Add the diced onion, bell pepper, and sweet potatoes. Sauté until the sweet potatoes are tender, about 10-12 minutes.
- Push the vegetables to the side and add the ground beef. Cook until browned, breaking it up as it cooks.
- Stir in minced garlic, chili powder, cumin, salt, and pepper.
- Add the black beans and corn, mixing everything together. Cook for an additional 5 minutes until heated through.
- Garnish with fresh cilantro before serving. Enjoy!
Notes
Feel free to swap ground beef for turkey or chicken for a leaner option. Consider adding a splash of lime juice before serving for extra flavor.
