Description

Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro (for garnish)


Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat.
  2. Add the diced onion, bell pepper, and sweet potatoes. Sauté until the sweet potatoes are tender, about 10-12 minutes.
  3. Push the vegetables to the side and add the ground beef. Cook until browned, breaking it up as it cooks.
  4. Stir in minced garlic, chili powder, cumin, salt, and pepper.
  5. Add the black beans and corn, mixing everything together. Cook for an additional 5 minutes until heated through.
  6. Garnish with fresh cilantro before serving. Enjoy!

Notes

Feel free to swap ground beef for turkey or chicken for a leaner option. Consider adding a splash of lime juice before serving for extra flavor.
