Description
Delicious pancakes inspired by Spanish churros, fluffy and topped with cinnamon sugar.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup cinnamon sugar (for topping)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture and stir gently until just combined; be careful not to overmix.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface.
- Flip the pancakes and cook until golden brown on the other side.
- Remove from the skillet and immediately top with cinnamon sugar.
- Repeat until all pancakes are cooked. Serve warm.
Notes
For a gluten-free option, substitute all-purpose flour with a gluten-free blend. Substitute milk with a dairy-free alternative for dairy-free pancakes.
