  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup cream cheese, softened
  • 1 cup jalapeños, chopped
  • 1 cup cheddar cheese, shredded
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion turns translucent.
  2. Stir in the shredded chicken and chopped jalapeños, allowing them to combine well.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Lower the heat and gradually mix in the softened cream cheese, stirring until it melts into the soup.
  5. Finally, add the shredded cheddar cheese, stirring until it becomes buttery and gooey.
  6. Season with salt and pepper to taste. Serve hot, garnished with additional jalapeños or cheese if desired.

Notes

For a vegetarian option, swap the chicken for white beans and use vegetable broth. Control the heat by adjusting the amount of jalapeños.
