Spinach and Ricotta Stuffed Shells


Description

Creamy ricotta and fresh spinach stuffed into jumbo pasta shells, topped with marinara sauce and gooey mozzarella.


Ingredients

  • 12 jumbo pasta shells
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions until al dente, then drain and cool.
  3. In a mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, Italian seasoning, and salt and pepper.
  4. Stuff each cooked shell with the spinach and cheese mixture.
  5. Spread 1 cup of marinara sauce on the bottom of a baking dish.
  6. Place the stuffed shells in the baking dish and cover them with the remaining marinara sauce.
  7. Sprinkle extra mozzarella cheese on top, if desired.
  8. Cover the dish with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  10. Allow to cool slightly before serving.

Notes

Great for meal prep; can be made a day in advance and stored in the refrigerator.
