Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 package (8 oz) cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt; set it aside.
  3. Cream the softened butter with the granulated sugar and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract, then gradually mix in the flour mixture until well combined.
  5. Press half of the dough into the bottom of the prepared pan, using the rest as topping.
  6. In another bowl, beat the cream cheese until smooth, then add sugar, vanilla, eggs one at a time, and sour cream.
  7. Pour the cheesecake mixture over the crust and spread it evenly.
  8. Bake for 50-60 minutes until the center jiggles slightly.
  9. Allow to cool completely and refrigerate for at least 4 hours before serving.

Notes

Make sure cream cheese is softened for smooth texture. Consider using a water bath while baking to prevent cracks.
