Description
A nutrient-dense, flavorful taco bowl built around roasted sweet potatoes and seasoned ground meat or beans, topped with pico de gallo, guacamole, and sour cream.
Ingredients
- 4 cups Sweet Potatoes, cubed
- 2 tablespoons Olive Oil
- 1 teaspoon Smoked Paprika
- Salt, to taste
- Pepper, to taste
- 1 pound Ground Beef (or turkey, chicken, or black beans)
- 2 tablespoons Taco Seasoning
- 1 cup Pico de Gallo
- 1 cup Guacamole
- 1/2 cup Sour Cream
- Optional Toppings: crumbled cheese, lime wedges, tortilla chips
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment.
- Toss sweet potatoes with olive oil, paprika, salt, and pepper. Spread in a single layer.
- Roast for 20–25 minutes, turning once until browned and tender.
- Brown the ground beef in a skillet over medium-high heat, breaking it up until no pink remains.
- Add taco seasoning and water, stir, and simmer for 1–2 minutes.
- Prepare pico de gallo and guacamole or use store-bought.
- Assemble bowls with roasted sweet potatoes, seasoned meat, pico, guacamole, and sour cream.
- Add optional toppings and serve with warm corn tortillas.
Notes
For convenience, buy pre-made pico and guacamole. If using beans, drain and rinse canned black beans and warm them with cumin.
