A refreshing coleslaw with the crispiness of apples and a tangy dressing, perfect for summer gatherings.
Ingredients
- 4 cups green cabbage, finely shredded
- 2 cups carrots, shredded (about 2 medium carrots)
- 2 medium apples, thinly sliced (Granny Smith works beautifully)
- ½ cup applesauce
- ½ cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the shredded cabbage and carrots.
- Thinly slice the apples and add them to the bowl.
- In a separate bowl, whisk together the applesauce, mayonnaise, apple cider vinegar, and honey. Add salt and pepper to taste.
- Pour the dressing over the cabbage mixture and toss well to combine.
- Let the salad sit for at least 30 minutes in the fridge before serving to allow the flavors to meld together.
Notes
Can substitute mayonnaise with Greek yogurt for a lighter version. Perfectly pairs with grilled meats or in sandwiches.
