Description

A refreshing coleslaw with the crispiness of apples and a tangy dressing, perfect for summer gatherings.


Ingredients

  • 4 cups green cabbage, finely shredded
  • 2 cups carrots, shredded (about 2 medium carrots)
  • 2 medium apples, thinly sliced (Granny Smith works beautifully)
  • ½ cup applesauce
  • ½ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • Salt and pepper to taste


Instructions

  1. In a large mixing bowl, combine the shredded cabbage and carrots.
  2. Thinly slice the apples and add them to the bowl.
  3. In a separate bowl, whisk together the applesauce, mayonnaise, apple cider vinegar, and honey. Add salt and pepper to taste.
  4. Pour the dressing over the cabbage mixture and toss well to combine.
  5. Let the salad sit for at least 30 minutes in the fridge before serving to allow the flavors to meld together.

Notes

Can substitute mayonnaise with Greek yogurt for a lighter version. Perfectly pairs with grilled meats or in sandwiches.
