Description
Warm, cheesy quesadillas filled with flavorful rotisserie chicken and spices, inspired by Taco Bell.
Ingredients
- 4 cups Rotisserie chicken, shredded
- 1 clove Garlic, minced
- 6 tbsp Pickled jalapeno, chopped
- 1/2 cup Mayonnaise
- 1/2 tsp Cayenne powder
- 2 tsp Smoked paprika
- Salt and pepper to taste
- 2 tsp Cumin
- 8 medium Flour tortillas
- 4 cups Cheese blend (cheddar and Monterey Jack)
- 1/2 cup Sour cream, for serving
Instructions
- Preheat a skillet over medium heat.
- Combine the shredded rotisserie chicken, minced garlic, pickled jalapenos, mayonnaise, cayenne powder, smoked paprika, cumin, salt, and pepper in a mixing bowl. Mix well until fully incorporated.
- Take a tortilla and place it in the skillet. Sprinkle half of it with cheese and then add a generous layer of the chicken mixture.
- Top with another tortilla and cook for approximately 3-4 minutes on each side, or until golden brown and cheese is melted.
- Repeat the process with remaining tortillas and filling until you have a stack of quesadillas.
- Serve hot with a side of sour cream for dipping.
Notes
Feel free to customize the filling with ingredients you enjoy, and keep leftovers stored in an airtight container for up to three days.
