Description

A hearty Taco Rice Bowl that’s satisfying and packed with flavor, perfect for busy weeknights.


Ingredients

  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 lb ground beef or chicken (or turkey for leaner choice)
  • 1 can black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar, Monterey jack, or combination)
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • Fresh cilantro for garnish


Instructions

  1. In a large skillet over medium heat, cook the ground beef or chicken until browned. Drain excess fat.
  2. Stir in the taco seasoning with a splash of water (about 1/4 cup) to coat well.
  3. Add black beans, corn, and diced tomatoes. Cook until heated through.
  4. In individual serving bowls, layer cooked rice first, then spoon the meat mixture over the top.
  5. Add toppings like shredded cheese, sliced avocado, and a dollop of sour cream.
  6. Garnish with fresh cilantro and serve immediately.
