Description

A comforting, one-pot taco soup bursting with savory flavors, perfect for busy weeknights and potlucks.


Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained (or 1 cup frozen corn)
  • 1 can diced tomatoes with green chilies
  • 1 can tomato sauce
  • 1 packet taco seasoning (or ~2 tbsp homemade mix)
  • 2 cups beef or chicken broth
  • Salt and pepper to taste
  • Chopped cilantro and lime wedges for serving (optional)


Instructions

  1. Heat a large pot over medium heat. Add the ground beef or turkey and the chopped onion. Cook, stirring and breaking up the meat, until browned and the onion is softened.
  2. Add the black beans, kidney beans, corn, diced tomatoes, tomato sauce, taco seasoning, and broth. Stir to combine.
  3. Bring the soup to a boil, then reduce to low and simmer uncovered for about 20 minutes.
  4. Taste and season with salt and pepper. Adjust flavors as necessary.
  5. Serve hot, garnished with cilantro and lime wedges, and with optional toppings as desired.

Notes

This soup is versatile; add toppings and serve it with tortilla chips or rice. It reheats and freezes well.
