Description
A cozy, no-fuss tater tot casserole with browned ground beef, creamy mushroom sauce, and a crunchy top of baked tater tots.
Ingredients
- 1 lb ground beef
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup sour cream
- 1 small onion, diced
- 2 cups shredded cheddar cheese, divided
- 1 bag (32 oz) frozen tater tots
- Salt and pepper, to taste
- Optional seasonings: garlic powder, paprika, or any favorite spices
Instructions
- Preheat oven to 375°F (190°C).
- Heat a skillet over medium. Add the ground beef and break it up as it cooks.
- Add the diced onion when the beef is halfway browned. Cook until the meat is fully browned and the onion is softened.
- Season with salt, pepper, and any optional spices. Drain excess fat if needed.
- Stir the cream of mushroom soup and sour cream into the beef. Mix until smooth and heated through, 2–3 minutes.
- Grease a casserole dish and spread the beef mixture evenly across the bottom.
- Sprinkle 1 cup of shredded cheddar evenly over the beef layer.
- Arrange the frozen tater tots in a single layer on top of the cheese.
- Bake for 25–30 minutes, or until the tater tots are golden and crisp. Remove and sprinkle the remaining 1 cup of cheddar on top, then return to the oven for 4–6 minutes until melted.
- Let the casserole rest for 5 minutes before serving.
Notes
Choose medium-shredded cheddar for good melt. If using lean ground beef, you may not need to drain much fat.
