Description

A delightful fusion of spicy chicken crumbles, fluffy scrambled eggs, and colorful veggies for a versatile breakfast bowl.


Ingredients

  • Sweet and spicy chicken crumbles (or homemade)
  • 4 Eggs
  • 2 Potatoes
  • 1 Bell pepper
  • 1 Onion
  • 1 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Optional seasoning (cumin, smoked paprika)


Instructions

  1. Prepare the chicken crumbles according to package instructions or cook your sweet and spicy chicken.
  2. In a skillet, heat olive oil over medium heat. Add diced onions and peppers; sauté until tender.
  3. Boil or roast the potatoes until cooked through, then chop into bite-sized pieces.
  4. Whisk the eggs with salt and pepper, and scramble them in the skillet with the sautéed vegetables.
  5. Assemble the breakfast bowls with chicken, scrambled eggs, roasted potatoes, and sautéed peppers and onions.
  6. Enjoy warm or store for meal prep.

Notes
