Ingredients
- Sweet and spicy chicken crumbles (or homemade)
- 4 Eggs
- 2 Potatoes
- 1 Bell pepper
- 1 Onion
- 1 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
- Optional seasoning (cumin, smoked paprika)
Instructions
- Prepare the chicken crumbles according to package instructions or cook your sweet and spicy chicken.
- In a skillet, heat olive oil over medium heat. Add diced onions and peppers; sauté until tender.
- Boil or roast the potatoes until cooked through, then chop into bite-sized pieces.
- Whisk the eggs with salt and pepper, and scramble them in the skillet with the sautéed vegetables.
- Assemble the breakfast bowls with chicken, scrambled eggs, roasted potatoes, and sautéed peppers and onions.
