Description

Ingredients

  • 3-4 boneless, skinless chicken breasts
  • 1 cup shredded Jack cheese

  • 1 cup low-sodium chicken broth
  • ½ cup sour cream
  • Salt and pepper to taste
  • Chopped green onions for topping
  • Paprika for topping


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub olive oil over the chicken breasts and season them with salt and pepper.
  3. In a skillet over medium-high heat, sear the chicken until golden brown on both sides, about 5 minutes per side.
  4. Add the minced garlic and sauté for another 30 seconds until fragrant.
  5. Pour in the chicken broth, allowing it to simmer while you scrape up any delicious brown bits stuck to the pan.
  6. Stir in the sour cream until thoroughly combined, letting it bubble for about 5 minutes to thicken.
  7. Top each chicken breast with shredded Jack cheese, then transfer to the oven. Bake for approximately 15 minutes, or until the cheese is melted and bubbly.
  8. Garnish with chopped green onions and a sprinkle of paprika before serving.

Notes

For extra flavor, marinate the chicken in olive oil and garlic for a few hours before cooking. Searing the chicken gives it a nice crust while keeping it juicy. Consider adding bacon bits or pepper jack cheese for a twist.
