Ingredients
- 3-4 boneless, skinless chicken breasts
- 1 cup shredded Jack cheese
- 2 tablespoons olive oil
- 2-3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- Salt and pepper to taste
- Chopped green onions and paprika for topping
Instructions
- Preheat your oven to 375°F (190°C).
- Rub olive oil over the chicken breasts, then season generously with salt and pepper.
- In a skillet over medium-high heat, sear the chicken until golden brown on both sides, about 5 minutes per side.
- Add the minced garlic and cook for another 30 seconds.
- Pour in the chicken broth and let it simmer, scraping up any browned bits from the bottom of the pan.
- Stir in the sour cream and allow it to bubble for about 5 minutes.
- Top each chicken breast with shredded Jack cheese, then transfer the skillet to the oven.
- Bake for about 15 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions and a sprinkle of paprika before serving.
Notes
Feel free to substitute chicken thighs or use Greek yogurt instead of sour cream for a lighter option.
