Description

A creamy and cheesy smothered chicken dish that’s quick and satisfying, perfect for weeknights or gatherings.


Ingredients

  • 3-4 boneless, skinless chicken breasts
  • 1 cup shredded Jack cheese
  • 2 tablespoons olive oil
  • 2-3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream
  • Salt and pepper to taste
  • Chopped green onions and paprika for topping


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub olive oil over the chicken breasts, then season generously with salt and pepper.
  3. In a skillet over medium-high heat, sear the chicken until golden brown on both sides, about 5 minutes per side.
  4. Add the minced garlic and cook for another 30 seconds.
  5. Pour in the chicken broth and let it simmer, scraping up any browned bits from the bottom of the pan.
  6. Stir in the sour cream and allow it to bubble for about 5 minutes.
  7. Top each chicken breast with shredded Jack cheese, then transfer the skillet to the oven.
  8. Bake for about 15 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped green onions and a sprinkle of paprika before serving.

Notes

Feel free to substitute chicken thighs or use Greek yogurt instead of sour cream for a lighter option.
