Description
A labor of love, this Texas Style Smoked Brisket BBQ features a whole Packer brisket rubbed with spices and slow-smoked for a tender, flavorful experience.
Ingredients
- 1 whole Packer brisket
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 1/3 cup coarse black pepper
- 1/4 cup kosher salt
- 2 tbsp paprika
- 1 roll pink butcher paper
- Wood pellets to taste (hickory or mesquite)
Instructions
- Preheat your smoker according to the manufacturer’s instructions.
- Trim the brisket, removing excess fat while leaving about a 1/4-inch layer for flavor.
- Combine garlic powder, onion powder, black pepper, salt, and paprika to create the rub. Apply the rub generously all over the brisket.
- Let the brisket sit at room temperature for about 30 minutes to 1 hour.
- Place the brisket in the smoker, fat side up, and cook at a steady temperature (typically around 225°F to 250°F) for about 480-720 minutes or until it reaches an internal temperature of 195°F to 205°F.
- Wrap the brisket in pink butcher paper about 2-3 hours before it’s done to help retain moisture.
- Once done, remove the brisket from the smoker and let it rest for at least 30 minutes before slicing and serving.
Notes
Best enjoyed sliced thinly against the grain with BBQ sauces on the side. Pair with classic sides like coleslaw, cornbread, or baked beans.
