Description

A refreshing and zesty Thai-inspired salad that combines crisp cucumbers, tender chicken, and a tangy dressing.


Ingredients

  • 2 cups of sliced cucumbers
  • 1 cup of diced cooked chicken breast
  • 1/2 cup of shredded carrots
  • 1/4 cup of fresh cilantro
  • 1/4 cup of chopped green onions
  • 1 tablespoon of fish sauce
  • 2 tablespoons of lime juice
  • 1 teaspoon of sugar
  • Pinch of red pepper flakes


Instructions

  1. Start by preparing the chicken. Grill or bake until fully cooked, then dice it into bite-sized pieces. Allow to cool slightly.
  2. In a large bowl, combine the sliced cucumbers, shredded carrots, diced chicken, cilantro, and green onions.
  3. In a small bowl, whisk together the fish sauce, lime juice, sugar, and red pepper flakes until well combined.
  4. Pour the dressing over the salad mixture. Toss everything together gently until it’s evenly coated.
  5. Taste and adjust seasoning if necessary, adding more lime juice or sugar as preferred.
  6. Serve immediately, or let it chill in the refrigerator for about 30 minutes to let the flavors meld together.

Notes

For added crunch, sprinkle some roasted peanuts on top before serving. Keep dressing separate until just before serving for best texture.
