Description

A delightful twist on classic Thanksgiving flavors featuring shredded turkey, stuffing, and cranberry sauce wrapped in warm tortillas, topped with gooey cheese.


Ingredients

  • Flour tortillas
  • Shredded turkey (leftover is perfect)
  • Stuffing (homemade or store-bought)
  • Cranberry sauce
  • Gravy (preferably leftover)
  • Shredded cheese (like cheddar or Monterey Jack)
  • Chopped green onions for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded turkey with stuffing and a few tablespoons of gravy until well mixed.
  3. Spoon the turkey mixture onto each tortilla, add a spoonful of cranberry sauce, and roll them up tightly.
  4. Position the rolled enchiladas seam-side down in a baking dish.
  5. Pour any remaining gravy over the top, then sprinkle with shredded cheese.
  6. Bake these lovely enchiladas for 20-25 minutes or until they’re heated through and the cheese is bubbly and golden.
  7. Finish with garnished green onions before serving for that extra touch.

Notes

These enchiladas can be stored in an airtight container in the refrigerator for up to 3 days and freeze beautifully for up to 2 months.
