Ingredients
- Flour tortillas
- Shredded turkey (leftover is perfect)
- Stuffing (homemade or store-bought)
- Cranberry sauce
- Gravy (preferably leftover)
- Shredded cheese (like cheddar or Monterey Jack)
- Chopped green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine shredded turkey with stuffing and a few tablespoons of gravy until well mixed.
- Spoon the turkey mixture onto each tortilla, add a spoonful of cranberry sauce, and roll them up tightly.
- Position the rolled enchiladas seam-side down in a baking dish.
- Pour any remaining gravy over the top, then sprinkle with shredded cheese.
- Bake these lovely enchiladas for 20-25 minutes or until they’re heated through and the cheese is bubbly and golden.
- Finish with garnished green onions before serving for that extra touch.
