Ingredients

  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • Tortilla chips for serving
  • Avocado and lime for garnish


Instructions

  1. Heat a large pot over medium heat and add a splash of oil. Add the chopped onion and minced garlic, cooking until the onion is translucent and fragrant.
  2. Stir in the chopped bell pepper and cook until softened.
  3. Add the lentils, vegetable broth, diced tomatoes, cumin, chili powder, salt, and pepper. Stir well to coat lentils with spices.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes, or until lentils are tender.
  5. Serve hot, topped with tortilla chips and garnished with avocado and lime.

Notes
