Ingredients
- 1 cup lentils
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tablespoon cumin
- 1 tablespoon chili powder
- Salt and pepper to taste
- Tortilla chips for serving
- Avocado and lime for garnish
Instructions
- Heat a large pot over medium heat and add a splash of oil. Add the chopped onion and minced garlic, cooking until the onion is translucent and fragrant.
- Stir in the chopped bell pepper and cook until softened.
- Add the lentils, vegetable broth, diced tomatoes, cumin, chili powder, salt, and pepper. Stir well to coat lentils with spices.
- Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes, or until lentils are tender.
- Serve hot, topped with tortilla chips and garnished with avocado and lime.
