Ingredients
- 1 ½ cups all-purpose flour
- 1 cup ground pistachios
- 1 cup plant-based milk (almond or oat)
- ½ cup vegetable oil
- 1 cup sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
- In a large mixing bowl, whisk together the all-purpose flour, ground pistachios, baking powder, baking soda, and salt.
- In another bowl, combine the sugar, plant-based milk, vegetable oil, and vanilla extract. Whisk until smooth.
- Gradually pour the wet mixture into the dry ingredients, gently stirring until just combined.
- Pour the batter into the prepared cake pan and bake for about 25-30 minutes, or until a toothpick comes out clean.
- Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
- For the icing, blend the softened dairy-free butter with powdered sugar, ground pistachios, and a splash of plant-based milk until creamy.
- Frost the cooled cake generously with the pistachio buttercream.
