Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup ground pistachios
  • 1 cup plant-based milk (almond or oat)
  • ½ cup vegetable oil
  • 1 cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, whisk together the all-purpose flour, ground pistachios, baking powder, baking soda, and salt.
  3. In another bowl, combine the sugar, plant-based milk, vegetable oil, and vanilla extract. Whisk until smooth.
  4. Gradually pour the wet mixture into the dry ingredients, gently stirring until just combined.
  5. Pour the batter into the prepared cake pan and bake for about 25-30 minutes, or until a toothpick comes out clean.
  6. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  7. For the icing, blend the softened dairy-free butter with powdered sugar, ground pistachios, and a splash of plant-based milk until creamy.
  8. Frost the cooled cake generously with the pistachio buttercream.

Notes

Serve with fresh berries or dairy-free vanilla ice cream. Store covered in the fridge for up to five days.
