Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup green beans, chopped
- 1 cup zucchini, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrots, and celery. Sauté until they soften, about 5-7 minutes.
- Incorporate the minced garlic and let it cook for another minute until fragrant.
- Pour in the vegetable broth, followed by the diced tomatoes, green beans, and zucchini.
- Stir in the dried thyme and basil. Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
