Description
A warm and comforting Vegetarian Gnocchi Soup, featuring soft gnocchi and a medley of vegetables in a creamy broth.
Ingredients
- 1 package potato gnocchi
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until soft and fragrant.
- Stir in diced carrots, celery, and bell pepper. Cook until veggies start to soften, about 3-5 minutes.
- Pour in vegetable broth and bring to a boil.
- When boiling, add the gnocchi and cook according to package instructions (generally about 2-3 minutes until they float).
- Lower the heat, stir in heavy cream and grated Parmesan cheese until creamy.
- Season with salt and pepper to taste and serve hot, garnished with fresh parsley.
Notes
For added flavor, sauté vegetables until slightly caramelized. Enjoy with a crusty loaf of bread or salad on the side.
