Description

A warm and comforting Vegetarian Gnocchi Soup, featuring soft gnocchi and a medley of vegetables in a creamy broth.


Ingredients

  • 1 package potato gnocchi
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until soft and fragrant.
  2. Stir in diced carrots, celery, and bell pepper. Cook until veggies start to soften, about 3-5 minutes.
  3. Pour in vegetable broth and bring to a boil.
  4. When boiling, add the gnocchi and cook according to package instructions (generally about 2-3 minutes until they float).
  5. Lower the heat, stir in heavy cream and grated Parmesan cheese until creamy.
  6. Season with salt and pepper to taste and serve hot, garnished with fresh parsley.

Notes

For added flavor, sauté vegetables until slightly caramelized. Enjoy with a crusty loaf of bread or salad on the side.
