Description

A delightful mash-up of classic walking tacos baked into a warm casserole, perfect for feeding a crowd.


Ingredients

  • 1 lb ground beef
  • 1 package taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 2 cups shredded cheddar cheese
  • 2 cups Fritos
  • 1 cup diced bell peppers
  • 1/2 cup diced onion
  • 1 cup sour cream
  • 1/4 cup chopped cilantro (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  3. Add the taco seasoning, black beans, corn, diced tomatoes, bell peppers, and onion to the skillet. Sauté for an additional 5 minutes, stirring occasionally.
  4. In a greased baking dish, layer half of the beef mixture, followed by half of the shredded cheese, and half of the Fritos. Repeat the layering process.
  5. Top with any remaining cheese on the surface.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is wonderfully melted and bubbly.
  7. Once out of the oven, finish with a dollop of sour cream and sprinkle with cilantro if desired. Serve it up while it’s hot!

Notes

Customize servings with an array of toppings like diced avocado, jalapeños, and extra sour cream.
