A comforting, creamy white chicken chili that’s perfect for chilly evenings or busy weeknights.
Ingredients
- 2 cups shredded boneless skinless chicken breasts
- 8 oz cream cheese
- 1 cup corn
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
Instructions
- Combine the chicken, cream cheese, corn, black beans, diced tomatoes, and seasonings in your crockpot.
- Pour enough chicken broth to cover all the ingredients.
- Give everything a good stir until well mixed.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve warm, garnished with fresh cilantro or shredded cheese.
Notes
Shortcut: Use a store-bought rotisserie chicken to save time. If you prefer more heat, feel free to add diced jalapeños or cayenne pepper.
