Crockpot White Chicken Chili with Cream Cheese


Description

A comforting, creamy white chicken chili that’s perfect for chilly evenings or busy weeknights.


Ingredients

  • 2 cups shredded boneless skinless chicken breasts
  • 8 oz cream cheese
  • 1 cup corn
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups chicken broth


Instructions

  1. Combine the chicken, cream cheese, corn, black beans, diced tomatoes, and seasonings in your crockpot.
  2. Pour enough chicken broth to cover all the ingredients.
  3. Give everything a good stir until well mixed.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Serve warm, garnished with fresh cilantro or shredded cheese.

Notes

Shortcut: Use a store-bought rotisserie chicken to save time. If you prefer more heat, feel free to add diced jalapeños or cayenne pepper.
