Ingredients
- 1 lb ground meat (sausage or turkey)
- 8 oz lasagna noodles
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, brown the ground meat along with the chopped onion and minced garlic over medium heat until it’s thoroughly cooked. Drain away any excess fat.
- Break the lasagna noodles into smaller pieces and toss them into the pot.
- Pour in the chicken or vegetable broth and bring the mixture to a simmer. Cook for about 10 to 12 minutes until the noodles are tender.
- Stir in the heavy cream, ricotta, mozzarella, and Parmesan cheese, mixing until everything is beautifully combined.
- Season with Italian seasoning, salt, and pepper to taste.
- Serve hot, garnished with fresh basil, and pair with crusty bread for a perfect meal.

Use uncooked pasta directly in the soup to save time, and consider adding a bay leaf while simmering for deeper flavors.
