A creamy and savory soup that combines the rich flavors of traditional lasagna in a comforting bowl.


Ingredients

  • 1 lb ground meat (sausage or turkey)
  • 8 oz lasagna noodles
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. In a large pot, brown the ground meat along with the chopped onion and minced garlic over medium heat until it’s thoroughly cooked. Drain away any excess fat.
  2. Break the lasagna noodles into smaller pieces and toss them into the pot.
  3. Pour in the chicken or vegetable broth and bring the mixture to a simmer. Cook for about 10 to 12 minutes until the noodles are tender.
  4. Stir in the heavy cream, ricotta, mozzarella, and Parmesan cheese, mixing until everything is beautifully combined.
  5. Season with Italian seasoning, salt, and pepper to taste.
  6. Serve hot, garnished with fresh basil, and pair with crusty bread for a perfect meal.

Notes

Use uncooked pasta directly in the soup to save time, and consider adding a bay leaf while simmering for deeper flavors.
