Description

A refreshing salad combining strawberries, basil, and mozzarella, tossed in a tangy balsamic dressing, perfect for summer gatherings.


Ingredients

  • 2 large chicken breasts
  • 3 tbsp fresh basil, finely chopped
  • 8 oz strawberries, halved
  • 7 1/3 tbsp balsamic vinegar
  • 1/2 tbsp brown sugar
  • 2 tsp salt
  • 2 tbsp olive oil
  • 8 oz fresh mozzarella cheese, cubed or sliced


Instructions

  1. Grill or pan-cook the chicken breasts until fully cooked, about 6-7 minutes per side depending on thickness. Let them cool and slice into bite-sized pieces.
  2. Combine the sliced chicken, fresh strawberries cut into halves, and finely chopped fresh basil in a mixing bowl.
  3. Whisk together the balsamic vinegar, brown sugar, salt, and olive oil in a small bowl until well combined.
  4. Drizzle the dressing over the salad mixture and toss gently to coat everything evenly.
  5. Add the fresh mozzarella cheese, either cubed or sliced, and serve immediately for the best flavor and presentation.

Notes

Store leftovers in an airtight container in the refrigerator for 1-2 days, keeping the dressing separate until serving.
